This whole dietary balancing act can get frustrating sometimes. As a diabetic and someone who is generally trying to lead a healthy, fit lifestyle, I need to go easy on the simple carbohydrates. That leaves more need and more space for protein from my daily caloric intake. But here’s the catch – most protein sources are high in fat and cholesterol. So if I eat less pasta and replace it with red meat, whole eggs, etc I’ll eventually clog up my arteries. Not good. Someone emailed me saying an alcohol drink or beer would help control my diabetes. But I doubt that.

The solution to my dilemma? Often I will replace red meat with fish and poultry, and will replace whole eggs with egg whites only. The fish and poultry thing was easy, especially since I happen to love salmon haddock and turkey. But the egg white replacement was a little more difficult.

First I tried separating the yolk from the egg white. The initial attempt was with a spoon, then a fork. This is much more difficult than you would think. What a mess! So I tried to get fancy with the egg-breaking and crack it just enough for the egg white to drip out, but not the yolk. That was ok for a few days until my kitchen began to smell from the yolks left in the trash can. Gross, I know – but I’m leading up to something so give me a minute…

Giving up on the idea of separating them myself, I went out and bought some egg “replacement” from the local store. I don’t know if you’ve ever tried this stuff (comes in a milk-carton-type-thing…) but it is totally nasty. End of story.

Eventually I got fed up and went to The Oracle (i.e. Google) to ask the question. And Google-The-Wise found this page about egg whites sold by a place called Eggwhites International and suddenly my problem was solved. And Ken and Erin lived healthfully ever-after.

    The best way to separate the yolk from the egg is to crack the eggs into a bowl, wash your hands, then carefully lift out the yolks, palm up, and let the egg drippings filter through your fingers back into the bowl.

    Instead of throwing the yolks in the trash, I would throw them out the window, into the toilet, or into the dog food bowl.

    Then again, Egg Beaters are a better solution :)

    My problem is protein bars. I’m addicted to them and they have the same amount of calories as a candy bar. Guess I need to stop buying them. Cause if I buy a whole box, I’ll eat the whole damned thing in one day.

    Oh Yeah!? Separating yolk from an egg is so hard that we have to give up the natural eggs and buy and eat a commercial product in bulk!?

    This entire page, including the video is an ad for that EggWhites product. We are sick and tired of this kind of hidden ads, posing them as genuine content. Give us a break!

    My dad was diagnosed with diabetes last year and we all are trying to make it easier on him by eating healthier. We do egg white frittatas as a special treat on saturday mornings. We use eggology egg whites because they are organic and they do tons of testing, so they are totally safe! We love them! Thanks for your tips on diabetes-it has really been helpful

    In order to separate the Egg white you can get a tool from any big supermarket ,you will find it either plastic or stainless steel small rounded piece ,very helpful .

    To separate yolk from egg: crack the egg and open it holding the egg somewhat upright so that the yolk is resting toward the bottom of the egg. Separate the two halves of the egg shell and juggle the yolk in between each half until the whites have dripped into the bowl. All you should be left with is shell and yolk. It is really easy to do and used in Italian cooking. Although they do it to remove the whites from the yolk and use the yolk for egg sauces.

    Keep in mind that the body does need fat and cholesterol. Just keep red meat and egg yolks to a minimum. Switch out beef for lamb. Its delicious and leaner.
